House favorites like the Signature Pasta and Veal Marsala "Saltinbocca" are going nowhere, as they have cemented themselves in Las Vegas cuisine lore, but Chef Luciano Sauto has refreshed the menu with innovative twists and even more classic Italian flavor profiles.
ChefSautto, who returns to Saluteafter a brief stop in Italy to further hone his skills, has reinvigorated the already delectable menu with additions such as fresh Sole Francese, served with wild arugula and lemon, the Risotto Verde, a stomach-pleasing union of perfectly-cooked risotto, wild shrimp, peas and asparagus, and Cioppino, a generations-old recipe that includes a variety of fresh shell fish and sea bass marrying in broth made from vine-ripened san marzano tomatoes.
In addition to the new menu comes a brand new dessert menu, as well, highlighted by the Tiramisu, a traditional indulgence of marscapone, lady fingers and espresso.
The new dessert menu also features modern Italian classics such as Warm Nutella Cake, Semolina Cake and a creamy New York Style Cheesecake made with cherry compote.
"We're always wanting to change up our menu and freshen it up based on the seasons and quality of ingredients," Sautto said. "We managed to do that, while still keeping our guest's favorites still on the menu."
