LAS VEGAS (KTNV) — Circa hotel-casino, the newest downtown resort, is set to open its doors Thursday after midnight and if you get a little hungry or thirsty you will have plenty of options to keep you happy.
The fireworks are out, at least for Project BBQ at the new property, with the owners hoping to capture the foot traffic along the Fremont Street Experience next to the Circa bar.
“We get the 24 million coming down and probably to see Circa, but they want to have a spot to see a show, eat and have a good time,” Rob Baker, owner of Project BBQ, said.

With options ranging from pork and brisket BBQ, it’s in an area with not many grab-and-go food options. So, they’re optimistic about the business.
“I don’t believe anybody can doubt that this is one of the best locations on Fremont to have the backyard,” Baker said.
Project BBQ is one of five restaurants opening at Circa. It includes the high-end steakhouse Barry’s Downtown Prime on the basement level.
It features eight different rooms with more than 40 artists providing eye-catching pictures on the walls as well as high-end modern furnishings.
And if there’s a craving for late-night eats, Saginaw’s Delicatessen may do the trick. Open 24/7, managing partner Paul Saginaw wants to give customers an experience.
“That experience is going to be characterized by really great food and over the top service,” he said.
Featuring big sandwiches that require two hands to eat, Saginaw wanted to give the place a casual sit-down atmosphere. His ultimate goal is to have his place become a favorite of locals.
“You say to them, you won’t believe it. Las Vegas has a great deli finally and that you want to show them this place. If that happens, I will feel that I’ll be successful,” he said.
